Healthy Vegan - Vegan Friendly Giant 'Jaffa' Cake

How Golden Am I?  Have you noted the last four recipes have been made with gold coloured vegetables and also happen to be accidentally vegan too. Well here is another - my Giant 'Jaffa' Cake.   I was inspired to make this by the groovy chics at  Kind Cakes, Mean Bakes  in Bristol.  They make  awesome biscuit shaped Jaffa Orange and Raspberry Fakes.   I thought I would give Jaffa Cake a go too, but in the form of one big cake that could be sliced and shared.  I decided to enhance and a dapt  my own vegan Chocolate Orange Cake . To demonstrate how large this cake it, hence the deliberate use of the descriptive giant in the title of the blog, look at my hands on the side. This is a whopper of a cake  measuring 36cm, just over 14 inches .  I made in my new PushPan, I have to admit I did struggle pushing the pan out of the tin, but it came out with a bit of patience, good job I am not doing a honest review on it as it was g...

Welcome to March Round  edition of Eat Your Greens.  This is a monthly vegetarian and vegan cooking challenge for food bloggers  to make something with a green vegetable (or fruit) each month.   I hope you will join in this months #EatYourGreens challenge hosted by The Veg Hog ,  The VegHog's #EatYourGreens hosting page, but before that here is the Round Up from March 2016.  The first recipe comes from Lisa's Kitchen.  Lisa shares with us Roasted Carrot and Azuki Bean Salad.  The carrots in this salad visually almost mimic 'chorizo'.  The salad is further enhanced with buttery avocado and baby spinach.  Next we have is a plate of scrumptious  Cilantro aka Coriander for those of us living in Europe with Penne Pasta . Healthy Vegan - April In My Kitchen

I don't have loads of fresh stuff this time round to share.  My fridge is pretty empty as I have been away for a few days, so I share with you some things that I picked up not that long ago.    These retro sauce pots that stack up on top of each other: Devil Sauce, Curry Sauce, Tartare Sauce and Mustard Sauce. I am not sure if they will ever be used for sauces, but I do like them. I think I may just fill them up with spices or seeds. Last year, I shared on my blog a Teapot for One that a friend had given to me for my Birthday. Well, early in the year, I spotted Teapot for Two in a High Street department store.  I am sorry the picture is not so good, but I hope you get the idea.  I haven't used it yet, but I jumped up and down like an excitable child when D presented it to me as a gift.  He does spoil me with little things.   This EZ Tofu Press is new in my kitchen too.   For those of you who cook with tofu on a regular b...

Healthy Vegan - Vegan BBQ Pulled Jackfruit

I've had a vegan BBQ pulled Jackfruit 'pork'  bookmarked for a long while (2012) by Clean Green Simple  who was given the recipe by a friend of a friend who owned a restaurant in Los Angeles, USA called Pure Luck (now sadly closed).  The Pure Luck restaurant and its famous eats are even acknowledged in the cookbook Thug Kitchen which inspired the authors BBQ Bean Burritos with Grilled Peach Salsa recipe. Anyway, I was then reminded of my bookmarked recipes when a fellow blogger shared on Facebook a link to Buzzfeed Food  of a film clip called BBQ Pulled Jackfruit That'll Fool Meat-Eaters.   I've had Jackfruit a few times in a curry, but it never crossed my mind to share it on my blog as its one of those dishes that I take for granted and don't think of it being overly unusual or exotic, but when I saw Jackfruit being used as a substitute for meat and in a BBQ type dish, well like any greedy vegetarian person, I wanted to try it.   I  final...
