Healthy Vegan - Five Welsh Castles and a Handsome Dragon

I am looking forward to my  holidays, however when the time comes we won't be venturing far.

So I am dreaming of dragons and castles.

 Did you know that Wales has more castles per square than any other county in the world, apparently it is so.   Over the years, we have visited our fair share of fantastic castles in Wales, Wales really is a land of legends, so this Friday I am sharing five.
Harlech Castle  -  where I was most most free. I  met my now husband in the seaside town of Harlech, so I will always have a fondness for the place.

Caerphilly Castle
Conwy Castle in the background.
Chepstow Castle
And finally, Cardiff Castle 
With its rather magnificent Animal Wall.  I love this city.

Brighton Eats blog post here .    Back home in Wales, we have seen a rise in  the number of fantastic independent vegetarian eateries, especailly in the last five years.  The majority of these are crammed in the city of Cardiff, the capital of Wales including its first 100% vegan cafe.  You will also find some vegetarian and vegan eateries in other parts of Wales, such as   Hunky Dory's in Newport   (now closed, but left a legacy by influencing non-vegetarian eateries to put slightly more interesting vegan and vegetarian options on their menu).   What all these places have in common is that they all serve down to earth, honest food - the kind of food I make at home.  However, there is not yet a 100% vegetarian or vegan restaurant with the Accolade of vegetarian fine dining  - haute cuisne - a gap that no doubt will be filled in the next few years, especially as there are a handful of excellent vegan and vegetarian supper clubs...

Healthy Vegan - Zucchini - Courgettes come in all shapes and sizes

I have been harvesting mostly courgettes aka Zucchini since my last Harvest Monday blog post ,   b ut I am pleased that they are all different in shapes, size and even colour  - makes for more variety and interesting eats.   Nestling in the trug are  Courgette   Gold Rush F1 ;  Courgette  Tristar   and  Courgette Squash Striato di Napoli   which  think is more marrow than squash; and  Courgette Tondo di Piacenza .  I am also growing some patty pans and hope to share them with you next week.  Recipes made this month with courgettes aka zucchini Roasted Courgette Layered 'Lasagne' Courgette Zucchini, Apricot and Pistachio Bread  Oven Baked Lemon Zucchini and New Potato Salad Zucchini Chocolate Brownies Zucchini Broad Beans and Peas Soup Australian Zucchini Slice Zucchini Frittata is made with   Courgette Tondo di Piacenza I also harvested a good handful of  French Beans  Climbing Purp...

Healthy Vegan - Seitan Roast with Stuffing

Here is my first ever attempt at Seitan Roast with Stuffing.     A celebratory Seitan Roast with Stuffing to be served with all the vegetables you find at Sunday Roast Dinner.  Talking of celebrations, let me wish all my readers  A Happy New Year - 2018.    I must confess, I am so glad to see the back of 2017 and am genuinely excited at 2018. 2018 will be a year of change for me and a year of new beginnings, but more about that later.  I have been playing around a lot with seitan recently and have been pleased with the results. This Seitan Roast was enjoyable, but it was not perfect.  If you look closer the  vegan filling made from onion, breadcrumbs  and rosemary get a bit lost.
